Erythritol - Natural Alternative to Sugar
Erythritol, discovered in 1848 by British chemist John Stenhouse, is a natural substitute for sugar. Although the name may sound chemical, erythritol is actually a sugar alcohol found naturally in a variety of foods such as pears, watermelons, corn, mushrooms and grapes. It is interesting that we can also find it in fermented products such as beer, cheese, sake, soy sauce and wine.
This sweetener is obtained on an industrial level by fermentation of glucose using the yeast Moniliella pollinis. Erythritol looks and tastes very similar to sugar, but is about 30% less sweet.
One of the key benefits of erythritol is its low caloric value, making it an ideal option for those watching their calorie intake. Unlike other sweeteners, erythritol does not cause laxative effects. Most of the ingested erythritol (up to 90%) is quickly absorbed and excreted through the urine, while a smaller part (10%) is excreted through the large intestine.
In addition, erythritol is thermostable and retains its sweetness even at temperatures up to 160°C, which makes it perfect for the preparation of various sweets and treats. In the food industry, erythritol has been used for decades to sweeten candies, chocolates, chewing gums, jams, fruit yogurts, shakes and various beverages.
