Rice Pudding with Rice Cream
Ingredients:
- 200ml of organic rice cream for cooking
- 100g rice
- 500ml of water
- 1 vanilla sugar or vanilla extract
- 2-3 tablespoons organic coconut syrup, or to taste
- A pinch of salt
- Cinnamon or grated lemon peel for garnish
- Fresh fruit or jam to serve (optional)
Instructions:
- Preparing rice: In a large pot, bring the rice to boil with water and a pinch of salt. Cook over medium-high heat until the rice is tender and most of the water is absorbed, which usually takes about 15-20 minutes. Stir occasionally to prevent the rice from sticking to the bottom.
- Adding rice cream and spices: When the rice is cooked and most of the water has been absorbed, add the rice cooking cream, syrup and vanilla sugar or vanilla extract. Mix well and cook at a low temperature for another 5-10 minutes, until the mixture becomes creamy. If the pudding is too thick, you can add a little more rice cream or water until you get the desired consistency.
- Final adjustments and cooling: When the pudding has reached the desired thickness and creaminess, remove it from the heat. If you like, you can add some cinnamon or grated lemon zest for extra flavor. Mix everything together once more.
- Serving: The rice pudding can be served warm or chilled, depending on your taste. If you prefer a colder pudding, let it cool to room temperature before refrigerating. Before serving, you can decorate the pudding with cinnamon, fresh fruit, jam or any other topping of your choice.
