Acai - Precious Fruit from the Amazon Forest

Acai, also known as "cabbage palm", is a tropical palm that originates from the Amazon forests of South America. This palm grows abundantly in the floodplains of the Amazon River basin in Brazil, where annual rainfall can exceed 2,500 mm. The acai palm reaches a height of 30-40 meters and often grows in dense groves, sometimes forming forest canopies with up to 7,000 trees per hectare.

The fruit of the acai tree is harvested during the dry season from May to November, when it becomes a key component of the diet of the local population, who consume up to 2 liters of diluted acai pulp juice per day. During the rest of the year, acai remains a regular part of the Brazilian diet, accounting for 40% of the total food intake of the traditional Cabolco population. Traditionally, acai pulp is served in gourds called "Cuias" with tapioca and can be consumed salty or sweet, while in southern Brazil it is eaten cold with granola.

Each acai tree produces up to 1,000 kg of fruit per year, and the individual berries are round, 1.5 to 2 cm in diameter, with a large seed and a thin layer of pulp. The berries change color as they ripen, from white to olive green to shiny black, indicating they are ready to be picked. The best quality berries can be recognized by the slight white powdery layer on the shell.

Local residents, known as Ribeirinhos or "people who live on the river", are organized into cooperatives that harvest and market the acai fruit daily. Fresh fruit is carefully cleaned and washed before the pulp is removed, pasteurized and frozen. Our acai is freeze-dried within 24 hours of harvest, preserving all the nutritional value without the use of radiation. The quality of our acai berries is recognized by the deep purple color produced by the anthocyanin cyanidin.

The freeze-drying process involves exposing the acai pulp to temperatures of -40° C in a vacuum environment, which eliminates all water through sublimation. This method preserves the nutritional value and prevents the formation of brown powder, which can occur with other storage methods such as spray drying.
