Recipe for tofu - soy cheese
Ingredients:
- 1 cup of soybeans
- 12 cups of water
- 1/4 teaspoon nigari
Preparation:
- Soak a cup of soybeans overnight.
- In the morning, blend the soy and add 12 cups of water.
- Cook, stirring constantly, until boiling. Add a glass of cold water and bring to a boil again. Repeat this process three times.
- Strain the mixture through a cheesecloth strainer. Add melted nigari (1/4 teaspoon in a little water) to the separated soy milk.
- After 5 minutes, pour the coagulated soy protein into a cheesecloth strainer, tie the cheesecloth and let it drain overnight. For harder cheese, place a weight.
Recipe for nigarisui – nigari drink
Ingredients:
- 1/4 or 1/2 teaspoon nigari
- 1 liter of clean water
Preparation:
- Dissolve nigari in 1 liter of water.
- Shake before each use.
