Add a cup of washed millet to three cups of boiling water. Cover, lower the temperature and cook for 30 minutes. Remove from heat and let stand for 20 minutes.
Recipe for millet and spinach pies:
1 cup of millet, 4 eggs, 500g of fresh spinach, 250g of tofu cheese, 2 teaspoons of capers, 3 tablespoons of olive oil, salt, pepper
Boil millet with three cups of water for 20 minutes. Beat eggs, add spinach, oil, salt, capers and tofu cheese. Combine everything with cooked millet, pour into a baking tray and bake at 180 degrees for about 20 minutes.
Instead of spinach, you can add swiss chard, arugula or spring onions.
